This peach fruit salad recipe is a great starter for a BBQ party. The grilled peaches bring out the sweetness and rich flavor of the fruits.

Yield: 4 servings
Vinaigrette:
Mix the first 5 ingredients together and slowly whisk in olive oil till emulsified.
The salad:
Cut shallots in half, drizzle with olive oil, season with salt and pepper, grill over medium heat on grill pan, turn often until lightly charred and tender. Set aside to cool.
Cut peaches in half and remove the pits. Grill the peach halves, face down, over medium heat on an oil-sprayed grill pan. Depending on the size of the peaches and the ripeness, grill time can be varied from 2 to 3 minutes. Once you see the charred marks, flip the peaches and grill for another 2 to 3 minutes.
Once the grilled peaches are all cool down, cut the peaches into big chunks.
In a large salad bowl, mix grilled peaches, grilled shallots with baby arugula, drizzle lightly with vinaigrette just enough to coat the salad right before serving. Top the serving plate with shaved Parmigiano Reggiano cheese and chopped walnuts.
