Mango Salsa

Salsa with mangoes, avocado and tomatoes

Fruit Salad Recipe: Melon, Apple, Zucchini and Pomegranate Salad

Take a fresh spin on the traditional starter salad plate with a brightly color bowl of mango salsa. It is packed with all different fruits mixed together in a spicy lime juice dressing. A great kick start of any meal!

Yield: 4 to 6 servings

Vinaigrette:

  • ½ cup packed of fresh cilantro, coarsely chopped
  • 1 Jalapeno chili peppers, seeded & coarsely chopped
  • ½ cup extra-virgin olive oil
  • 1 teaspoon salt
  • 2 tablespoons sugar
  • ½ teaspoons freshly ground black pepper
  • Juice of one lime (or a whole lemon)

Blend all ingredients above in a food processor or a blender, pulse a few times till the mixture becomes smooth.

The salsa:

  • 3 mangoes (best to chose the mangoes which just turns ripe but not mushy).
  • 2 ripe avocadoes
  • 1 pint of ripe grape or cherry tomatoes

Trim the skin off the mangoes; cut both cheeks of the mango out; use a sharp knife to cut the mango cheeks into cubes.

Cut avocado into half length-wise to remove the pit. Gently carve the grid in the avocado flesh. Use a spoon to scrape along the inner shell of the carved avocado cheek to yield cubes.

Cut grape or cherry tomatoes in halves.

Mix all ingredients together in a big bowl, pour in jalapeno & cilantro lime dressing, add chopped cilantro, salt and freshly ground black pepper to taste.
