Mixed Fruit Salsa

Fruit Salad Recipe: Melon, Apple, Zucchini and Pomegranate Salad

When you have different type of fruits and not sure what to make, salsa or fruit salad plate will not go wrong. Keep in mind that of the fruits are firm in texture then you can mix them in with the dressing. If the fruits are not firm (but not too soft) then just drizzle the dressing on top to avoid mashing the fruits.

Yield: 4 to 6 servings

Vinaigrette:

  • ½ cup packed of fresh cilantro, coarsely chopped
  • 1 Jalapeno chili peppers, seeded & coarsely chopped
  • ½ cup extra-virgin olive oil
  • 1 teaspoon salt
  • 2 tablespoons sugar
  • ½ teaspoons freshly ground black pepper
  • Juice of one lime (or a whole lemon)

Blend all ingredients above in a food processor or a blender, pulse a few times till the mixture becomes smooth.

The salad:

  • 1 pint of ripe but firm strawberries
  • 2 ripe mangoes (best would be ripe but firm mangoes)
  • 3 kiwi
  • 2 tablespoon of chia seeds

Cut all the fruits above into cubes. You can choose any kind of fruits in season. Keep in mind that salsa goes better with firm fruits that can hold texture and have a bit sour taste. In the illustrated picture, we use mangoes, strawberries and kiwis. Right before serving, in a big salad bowl, pour the dressing over the fruit mixture and gently toss in 2 tablespoons of chia seeds.
