Walnut Apple Endive Salad

Fruit Salad Recipe: Melon, Apple, Zucchini and Pomegranate Salad

This walnut apple endive fruit salad recipe is very popular in the Fall. If you prepare the fruit salad ahead of time, be sure to soak the apple slices in a bowl of diluted lemon/lime juice so the apple slices won't turn brown from oxidization.

Yield: 4 to 6 servings

Vinaigrette:

  • 1/2 cup extra-virgin olive oil
  • 1/4 cup white wine vinegar
  • 1 teaspoon honey
  • 1 large shallot, minced
  • salt and ground black pepper to taste

Whisk oil, vinegar, honey, salt, black pepper and minced shallot in a small bowl to blend well.

The salad:

  • 2 Granny Smith (or Honey Crisp) apples, cored and thinly sliced
  • 1 cup coarsely chopped roasted walnuts
  • 1 cup crumbled goat cheese (if you don’t like goat cheese, you can replace it with Gorgonzola cheese)
  • 3 heads of red Belgian endive, cut into 2-inches strips
  • 3 packed cups of baby arugula (optional)

Combine chopped endive, arugula and apples in a large bowl, mixed with vinaigrette only a few minutes before serving time. Toss in walnuts and cheese. Add freshly ground black pepper and salt to taste.
