Traditional Caprese Salad with tomatoes

Fruit Salad Recipe: Melon, Apple, Zucchini and Pomegranate Salad

One of the easiest fruit salad / appetizer you can make just in a few minutes of prep time. And yes, technically tomato is a type of fruits. But in the kitchen, we treat tomato as vegetable because of its lack of the sweetness and strong flavor of a fruit, it is commonly used in savory dishes.

Yield: 4 to 6 servings

Balsamic Glaze

  • 16-ounce bottle of balsamic vinegar
  • ½ cup of brown sugar
  • a pinch of salt

Pour the entire 16-ounce bottle of balsamic vinegar into a saucepot, add sugar and salt. Stir the mixture occasionally till it reduces to half and the content turns syrupy and thick. Let it completely cool down before store it in an air-tight glass container for later use.

The salad:

  • Balsamic glaze
  • Basil oil or basil pesto sauce
  • Ripe but firm tomatoes (preferably heirloom tomatoes)
  • Freshly made mozzarella cheese
  • Fresh Italian basil leaves
  • 1/4 teaspoon freshly ground black pepper

Slice heirloom tomatoes into ¼ inches thick.Slice freshly made mozzarella cheese, try to keep the same thickness as tomato slices. On a serving plate, put each mozzarella cheese slice on top of tomato slice, drizzle balsamic glaze generously over the cheese and tomato, top with basil oil (or pesto sauce) and basil leaves, season with salt and cracked pepper to taste.
